My Low Carb Journey

Over a year ago, I decided to try a low-carb diet, and honestly, it has been a total game changer. I went all in, swapping in things like zero-carb tortillas and figuring out how to still enjoy my favorite foods. In college, my eating was not the best (let’s just say I fully took advantage of the all-you-can-eat dining hall), which meant lots of pasta and pizza nights. When I was in the dorm and first starting this low-carb journey, I would try to look for better options. For example, when I went to the cafeteria, I would take my low-carb tortillas to make quesadillas. Now that I am cooking more, I am having so much fun recreating healthier versions of my favorite comfort foods.

One challenge I still have is weighing myself, so instead of stressing about the scale, I started tracking my waist measurements. I am so excited to share that I have gone from 39 inches down to 34 inches, which is 5 inches, or about 20 pounds. It feels amazing to see that progress, and it keeps me motivated to keep going.

Yes, I get most of my recipes from Chat GPT (don’t laugh) and YouTube. For example, I figured out how to make an awesome low-carb pizza recipe that actually satisfies those pizza cravings. It is crazy how a few small changes can make such a big difference. I will be sharing my favorite recipes soon!

  1. Megan, I love reading your stories and updates. What a great idea to use measurements instead of weight. I do not like scales. I have one but don’t use it because it’s discouraging. I like the idea of moving toward measurements to chart progress. Brilliant!! By the way, I am looking forward to celebrating your graduation from U of H! 👏👏👏👏👏❤️
